Mechanically: Rogues have a ton of skill proficiencies as well as being The Trap Gai in most parties. They have strong options for every type of action they get per round, and favor mobile combat more heavily than any class save monk. A rogue is almost never lacking in things to do, and their wide skill selection means they're usually able to try more dramatic/cinematic Coolgai Schitte than other classes can. Given all the tropes and colorful stock characters people draw on when playing rogues, there's more acceptance of Wild Weirdoes that pull all this junk, as well.
Gut-Feelingly: ...they're rogues. Who wouldn't be about that rogue life?
I think part of it is the idea that you can be better at a handful of things than anyone else with expertise, another part is the idea of you being a real slippery guy for many of the reasons stated above, and finally that you have archtypes to support a fairly wide range of playstyles and skill combinations. You can use the rogue class to make a wilderness specialist who can live off the land but without all the druid mumbo jumbo getting in the way like a ranger. You can play a skulking assassin who can get in and out of places. You can play someone who realized that spellcasters are sometimes bullshit in what they can do, and has learned ways to circumvent that while not actually needing much talent in the art themselves. You can also make the con man, good at talking his way into and out of situations better than anyone else. Rogues as a class is probably the most diverse combination of talents and abilities of the 13 official classes, being able to mix any mental stats with a universally useful dexterity, which also makes it an excellent dip.
Rogues are classic. Many folk tales and adventure stories romanticize the idea of a rogue like character. Robin Hood, Bilbo Baggins, Tasselhoff, many others. There is just something about being bad, or nearly bad, that is just so tempting and compelling as a character.

They always have stuff to do. Actions, Bonus Actions, Reactions, lots of skills.... The more times a character can do things in-game, the cooler they feel.
Built correctly, a rogue can be very effective in all three pillars of the game. You rarely encounter a situation where you cannot contribute meaningfully to the outcome.
I mean, getting in a sneak attack or backstab is exciting during combat encounters, but I think what really makes rogues the most fun class for me is the versatility. You can lean in just about any direction or go with a jack of all trades type, but there are SO many non-combat skills your rogue can have. You can be a social rogue who excels at gathering information, which is perfect for courtly intrigue type games but handy for plenty of campaigns, whether you're unraveling a mystery or just trying to find out where your next objective is. You can be super sneaky, which... just IS fun. You can be an expert at dismantling traps for a dungeon dive, or an escape artist, which comes in handy if your party gets captured and someone needs to get everyone reunited with their weapons and out of a locked cell... there's always something for a rogue to do, and it's all pretty fun.
Almost all of the Rogues abilities have no limitations on how many times you can use them. Most classes have spell slots, or only get to do their cool abilities a specific number of times per long rest, or once per short rest. But as a Rogue, you almost never have to worry about "should I save this ability/spell slot for later".
Arcane Tricksters are an exception because they get spell slots, but they also get unlimited uses of cantrips such as their improved Mage Hand, Minor Illusion, Message, or others.
It's so much fun to have unlimited uses of your Expertise in Stealth and other skills, to have unlimited uses of Sneak Attack, to have unlimited uses of Cunning Action, to have unlimited uses of Uncanny Dodge, to have unlimited uses of Evasion, unlimited uses of Reliable Talent, etc.

i think its the options to avoid damage while dealing damage by stabbing. Let's face it we have all wanted to stab someone at one time or another.
I stab (sneak attack), I bonus action to disengage. Reaction to half damage, evasion. Whooo what a rush.

I play as a Tabaxi Arcane Trickster
Just working with wizards or other rogues is so much fun. Pulling skills that neither class has alone without multi-classing is pretty awesome.
And also playing as a socially awkward Tabaxi adds more to the fun. I say they are the most diverse class, and that's what makes them so much fun.
