Your DM will make their own ruling about these things, but here goes.
No to poison sucking. They don’t breath, so they can’t. (As an aside, “sucking out poison” isn’t a thing you can do, by RAW. I might do something like allow another chat to make a medicine check, say, for flavor they’re sucking it out, and give advantage on a save, but sucking it out isn’t officially a thing.)
Since the servant can’t suck it out, they won’t be damaged.
Technically, sucking out poison isn’t possible IRL either. By the time anyone had even gotten into position your heart would have already beat a minimum of 3-4 times and by then it’s 3-4 heartbeats too late.
Please forgive the large ammount of questions, with utter sincerity, I humbly pose these queries. Imagine this scenario: a party member has been bitten by a poisonous snake, failed his save, and is poisoned. They ask the party to suck out the poison, but no one is willing because it would also give them the poisoned status.
For reference: Unseen Servant, Basic Rules , pg. 284
"This spell creates an invisible, mindless, shapeless, Medium force that performs simple tasks at your command until the spell ends. The servant springs into existence in an unoccupied space on the ground within range. It has AC 10, 1 hit point, and a Strength of 2, and it can't attack. If it drops to 0 hit points, the spell ends.
Once on each of your turns as a bonus action, you can mentally command the servant to move up to 15 feet and interact with an object. The servant can perform simple tasks that a human servant could do, such as fetching things, cleaning, mending, folding clothes, lighting fires, serving food, and pouring wine. Once you give the command, the servant performs the task to the best of its ability until it completes the task, then waits for your next command.
If you command the servant to perform a task that would move it more than 60 feet away from you, the spell ends."
Now I turn to your greater minds, and please ask me if you are uncertain on words and I shall do my best to politely use better words:
1) Can an unseen servant use suction force to draw out the poison?
2) Will this do poison damage to a magic spell and thus end the spell?
3) Could an unseen servant 'Help' (thatt is by way of mechanical rules utalize the help action) in a medicine check by applying pressure to a wound, wrapping bandages, or holding a broken limb steady?
I am fairly certain an Unseen Servant can use, 'hands' but can it use a 'mouth' or 'fingers' for delicate work like sewing, or chewing food for an elderly person?
All this I ask you and beg your paitence, thank you for reading and your time.
It's D&D. Poison is used as a generic catchall term, not in the real life meaning.
Venom, toxin, poison, parasitic infection and more are all described as "poison".

I'd simply rule based on the listed capabilities of the unseen servant, that it is incapable of using both the help action, or the improvised action required to suck the poison out itself, since the only legal action it can take RAW is interact with object.
Aside from that as someone mentioned, if sucking out poison isn't a real thing anyway, there is no real point to it in the first place unless your DM rules otherwise.
Overall I believe the unseen servant being mindless is intended to prevent it from performing anything more tactically advantageous than flipping levers or tripping traps off.

I would allow them to help with a check.

Again, seeing as how no servant, seen or otherwise can suck out poison, I would rule no.
