Hexblade's Curse gives +X damage = Proficiency Bonus to 'Damage Rolls'. So say I did this:
Initial Weapon Attack + Dreadful Strikes from 3 levels in Ranger + Hex / Hunter's Mark (cast at another time obviously) + Sneak Attack from 1 level in Rogue
Would each receive the + Proficiency Bonus OR do they all count as one big damage roll consisting of extra/additional damage and I'd only get the + Proficiency Bonus once?

This is the same as asking us which of these can crit. Because they can all crit, they're one big damage roll - the damage roll from the attack, which is crittable because and only because it's all attack damage. For examples of distinct damage rolls, consider basic poison or the fighter subclass Psi Warrior spending psionic power dice on damage. The distinction can matter in many contexts, like Concentration saves.
In case you're wondering how we know, it's based on certain keywords and the lack of a save. In particular:
Another keyword that can be used in place of "extra" is "additional". In the absence of any keywords, e.g. the way a Psi Warrior's Psionic Strike simply deals damage, that's a distinct instance of damage. Another way to tell is whether or not there's a save - if there is a save, the damage due to failing the save is always distinct (unless, as always, a special rule tells you otherwise). That's why the Basic Poison I linked above would also be distinct damage.
If you want a case that will cause the RAW to collide with itself and you'll need your DM to rule on it, with the ruling favored by Jeremy Crawford leading to absolutely horrifically large amounts of damage dealt, cast Magic Missile with Hexblade's Curse up. JC has tweeted that at his table, even when you target 1 creature with every dart, you roll once for the damage and multiply by the number of darts, which means your proficiency bonus will be multiplied by the number of darts.
All of the damage dice originating from the same Attack Roll are all part of the same Damage Roll. So you only add your damage bonus from Hexblades Curse once. On the plus side this is why all those damage dice get doubled when you land a Critical Hit instead of just the weapon's damage dice.
It isn't named the most clear, but when you roll damage for a weapon the "damage roll" can include multiple dice. So no, you do not add your proficiency bonus once for each die. You add it once overall.
as a note, you cannot have both hex and hunter's mark active at the same time. They both require concentration and you can only concentrate on one spell at a time.

I'm also familiar with it's pairing with Magic Missile but due to how the ability is worded about 'Damage Rolls' and no clear answer within the https://www.dndbeyond.com/sources/phb/combat#DamageRolls section I was sort out at a loss as other similar abilities and spells phrase it differently (attack roll / on hit / etc) so I wondered about the possibility.
