So what product presents this class (domain? subclass? variant?) as I find references to it but scant mention of it's location. It is available during character creation but I would like to see the details as I'm not sure we are playing it properly.

If you are seeing it as an option in character creation that means someone in the campaign added it with homebrew. It may not even be the UA version at that point.
When in doubt, turn homebrew off in character creation.
While “subclass” is the generic term which applies to all classes, Sorcerers call their subclasses “Sorcerous Origins.”
As DxJxC mentioned, the actual subclass is named “Divine Soul.” If you are seeking something named “Favored Soul,” that’s Homebrew and you would need to ask it’s author how it’s sposta work.
if instead you have access to the Divine Soul,” then it is possibly the official subclass. If anyone in the campaign has bought that book, or at least that subclass, from DDB; and if content sharing is enabled for the campaign, then you should be able to see it here:
Of you do not see it there, then the version you can access is Homebrewed. You would be able to confirm that by creating or viewing a character with that subclass and checking to see if it has a field labeled “Version,” even if there is no version designated. (Officially published content does not have that field listed at all.)

It was an Unearthed Arcana Sorcerer subclass. It was replaced with the Divine Soul subclass.

Divine soul is in xanathar’s guide to everything. As Tim said, divine soul is what favored soul became.
