I don't understand the question. Your druid wants to raise an ape to get stronger and later be able to turn into that specific stronger ape with wild shape? That is not how the ability works.
I have a level 2 druid, moon circle. This allows me to use the wild shape to transform myself into a CR 1 beast. However, there is no CR 1 ape in the books, so I thought of creating one based on the brown bear, but with some modifications. I would like to know if there are any rules for the creation of this CR ape, such as the calculation of hit points, attributes and others.

Incorrect. A level 2 Druid cannot turn into a CR 1 anything using Wild Shape. You can turn into a CR 1/4 creature. You can not turn into an Ape at all yet.
Ran your gorilla through the DMG creating a monster scale:
Defense CR is 1/8 (almost 1/4), offensive CR is a solid 4. That averages to a strong CR 2 and doesn't even account for the call for help trait you gave it (though this feature also technically does nothing).
I am interested in raising a gorilla with CR 1 to use in my wild druid shape. Are there any rules for this creation?

And there is no way to increase CR.
I believe they are asking how to homebrew a CR 1 version of an ape to use as an 8th level wild shape.

Please describe what you are trying to do better.
The moon's circle allows the druid to transform into a CR 1 beast at level 2.
I found the material poor in the sense of having only two types of monkeys, one with very low CR and one with very high CR (7).
I created a gorilla of CR 1, follow the link https://www.dndbeyond.com/monsters/952222-gorilla
My intention is to use it in a druid wild shape and to be able to fight my quarterstaff.
Ah good to know about the Moon Druid. I was unaware of that. Thank you.
Apes are not monkeys.
That’s way too powerful for CR 1. That’s at least CR 2.
You have some typos.
