You gain a +3 bonus to attack and damage rolls made with this magic weapon. In addition, the weapon ignores resistance to slashing damage.
When you attack a creature that has at least one head with this weapon and roll a 20 on the attack roll, you cut off one of the creature's heads. The creature dies if it can't survive without the lost head. A creature is immune to this effect if it is immune to slashing damage, doesn't have or need a head, has legendary actions, or the GM decides that the creature is too big for its head to be cut off with this weapon. Such a creature instead takes an extra 6d8 slashing damage from the hit.

You would double the weapons attack die then add the 6D8 as well
Vorpal means 'Hinged', which can be interpreted that the blade can function similar to a pair of scissors.
So the sword says if a monster is immune to slashing deal an extra 6d8 slashing. wouldn't this still do no damage?

Correct, it would still do no damage. It's worded that way just to specify that a creature that can't be cut also can't have its head cut off

Because its a nat 20 which is a crit, if i used hexblade curse and got a 19 would it still work

So, I've figured out the whole "6d8 on a 20" thing.
Yes, generally speaking, a 20 is always a crit. But, certain equipment and abilities, like adamantine armour, negate crit damage.
So, if you roll the 20, but the enemy doesn't take crit damage, they still take the 6d8 damage. If they DO take crit damage, it becomes 12d8 damage. And if you crit on 18-19, you don't get the 6d8 at all.
Is it only 20s or if you're playing champion and you get a 19 does that activate that effect?

No, it is because of a 20. There is a mechanical distinction between something that happens on a 20 and something that happens on a crit. Doubling these dice has been explicitly confirmed by Jeremy Crawford.
