You gain a +3 bonus to attack and damage rolls made with this magic weapon. In addition, the weapon ignores resistance to slashing damage.
When you attack a creature that has at least one head with this weapon and roll a 20 on the attack roll, you cut off one of the creature's heads. The creature dies if it can't survive without the lost head. A creature is immune to this effect if it is immune to slashing damage, doesn't have or need a head, has legendary actions, or the GM decides that the creature is too big for its head to be cut off with this weapon. Such a creature instead takes an extra 6d8 slashing damage from the hit.

It is on a Nat 20, not a crit. 19 doesn't qualify even if it is a crit.
I'm guessing the cost would be one (1) head.
Why would an axe-type weapon not be able to take this enchantment? I see an axe cleaving through metal, flesh, & bone like the proverbial hot knife through butter.

If you cut a head of something with multiple heads, like a hydra, would it die?

The SRD content (note "Basic Rules" source reference) uses the term GM because DM isn't under the OGL and thus not used in SRD material.
This page uses the SRD content and thus is viewable to people who haven't bought the DMG on dndbeyond. The vorpal sword entry at https://www.dndbeyond.com/sources/dmg/magic-items-a-z (or in the printed book) uses DM..
The reason is uses GM is exactly because wotc owns the term Dungeon Master and doesn't want to license its use under the OGL.

Vorpal Spear, on an nat 20 you penetrate through their armor and stab them directly within the heart. If they need an heart to survive they die instantly.

Hey here is a good question. I know it pretty much says that as long as it has a head this sword can slice it off, but should size category difference be taken into consideration?
Let's say a Luma bird folk from humblewood which is 5th edition compatible (size category small) gets a vorpal sword, and rolls a nat 20 on a ancient blue dragon (size category gargantuan.) Should they still be able to take off the dragon's head?
