if i was the dm id say just play a kobold or dragonborn and have it as familiar. if you really want to play as a familiar critical role just had a one shot where they all played as familiars, so check that out.
It’s not really possible to play as one but if u bond with one u can communicate with it and look through its eyes
You can, Tasha’s sidekicks let you or a dm play as anything with a stat lock that had a a cr of 1/2 or less you get simplified versions of the classes too!

Do these come in the same color variations as regular dragons (gold, silver, red, black, etc)? And if so, would that affect their alignment? Or are they all (or almost all) neutral good?

The problem with having a real pseudodragon as a familiar is, it only has seven hit points and when it dies, it's dead. Getting the advantage on saving throws isn't much good if it's in the area of affect as well, takes 8+ damage, and is killed.
