The spell targets the chosen creature instead of the spectator. If the spell forced a saving throw, the chosen creature makes its own save. If the spell was an attack, the attack roll is rerolled against the chosen creature.

Lawful neutral, so “surprisingly polite” is how I’d characterize them.
As a (usually) summoned guardian that can conjure its own sustenance, you can really throw these guys anywhere you want.
honestly, the time limit is the only limiting factor for these things, but I would guess that a summoner might be able to befriend one who will be willing to continue guarding an item or place or maybe renew the time.
Very true. And, a 100 years is a generous amount of time to find more components if you want to renew the summoning.
If you want to keep it in an abandoned ruin, with a slightly more sinister tone, a trick might be to lock down the area with a spell that prevents planar travel (like private sanctum). I’m sure it would be quite unhappy with being trapped in this dimension for so long (perhaps even a little crazy), but it would be there.
Technically speaking, there is no limit to its create food and water ability. this thing could end world hunger.
So, how big is it? About 3 ft diameter perhaps? With 2 ft long eyestocks?
Objection! It only creates enough for itself. (It would be awesome if it could though.)
What if it does that multiple times? It does this as an action and has no limit on how many times it could do this.

I haven't heard that but if you're the DM then what you say goes. If you want your beholder(s) to have telekinesis then by golly give 'em telekinesis, especially since that's very related to their canon abilities, such as telepathy and levitation.
I wanted to know because my guide for the party is a little bit nuts, and in the background of a battle I was gonna have him be playing telekinetic chess with one. So far, its getting a bit crazy :)

I loved summoning these guys back in 2e as a preist of helm with the 5 level spell summon spectator. Helm god of guardians created the spectators to assist his faithful and clergy "paraphrasing". Well at least that is what the lore behind them was in the 2e "Faiths and Avatars" book.
I think that 1 or 2 of the types did. I loved the "beholder mages/wizards" who eye stalks cast different level spells.
i as a dm wanted to play a against my players beholder and i thought it would be too hard on as they're low level but this solved that problem
