I've been compiling all of the confirmed XGE content (linked to the corresponding posts) in the public DM notes of my campaign. I thought others might appreciate it (and my Perception check didn't find any similar posts), so I thought I'd share it with the masses. I'll continue to update it with each new post from Doomsphere. If it's ever missing anything, let me know and post the URL to the source in the thread so that I can link to it in the main post.
This is going to be a long one so please be patient. A friend of mine is REALLY hoping Phoenix Sorcery makes it though to XGE, so I sat down with them and went over all the classes, the UA and what subclasses have already been revealed, so without further preamble here we go.
27 new subclasses, 4 classes are going to get 3. All the others are going to get 2 except wizard who gets 1. We know Barb and Fighter are getting three and we know 18/27 of them, so there are 9 more to come out, at least one more is going to druid, one is going to wizard, and one more is going to Warlock, at least 2 are going to Pally and at least 2 are going to Monk. That leaves just 2 that could be Bard, Cleric, Druid, Monk, Paladin, Ranger, Rogue, Sorcerer, or Warlock.
Druid: Possibilities for Druid are Circle of Shepard and Twilight, but Twilight seemed to have fallen out of playtesting while Shepard went through the second round of it, since we only have one druid sub already its second is likely to be Shepard.
Monk: None revealed yet. UA play tested Kensei, Tranquility, and Drunken Master. All of which were only seen in UA once. I honestly have no data over the popularity but at least two of those are going to come out in XGE, I would say Kensei and Drunken Master simply because they seem to fit the class fantasy better. All three could come through if Monk is one of the classes that get 3 subclasses.
Paladin: Nothing revealed yet, UA had Oath of Conquest, Treachery, and Redemption. At least two will come through, I would say likely Conquest and Treachery but I cannot rule out Redemption or the possibility that Paladin may be one of the remaining classes with three subclasses.
Ranger: Two subs revealed, Horizon Walker and Monster Slayer. UA also had Primeval Guardian and Deep Stalker, as well as the fact that the base class for ranger has been revised a few times in UA. While I cannot rule out Ranger as one of the classes with three subclasses I think it is unlikely personally due to the fact that the base class still seems to be getting revised periodically.
Rogue: Two subs confirmed Inquisitive and Scout. I also couldn’t really find any other UA for Rogues but I am willing to admit I may have missed something if I did let me know. If I didn’t and all subclasses in XGE that are new are from UA then that removes rogue from the possibility of having a third subclass.
Sorcerer: Two subclasses confirmed, Divine Soul/Favored Soul, and Shadow. UA also printed Phoenix, Sea, and Stone. If Sorcerer has the third subclass I am leaning towards Phoenix for it as Sea and Stone are elemental flavored and would compete against Storm for now, plus as I remember Phoenix has quirks like Shadow does.
Warlock: Celestial confirmed, at least one more in the chute. UA had Hexblade, Raven Queen, The Seeker, and The Undying Light. I would say Undying Light is low probability because of its kind of shares territory with Celestial. I haven’t heard much about The Seeker but Hexblade has a strong following of Bladelocks, and The Raven Queen seems to be a fairly popular figure. At least one of them is coming through, possibly two.
So from the list of Bard, Cleric, Druid, Monk, Paladin, Ranger, Rogue, Sorcerer, or Warlock, I would pull out Rogue as a not going to get a third and say that most likely we will get a third subclass in Sorcerer or Warlock. My reasoning is this, of all the UA they have the most Subclasses that I could remember/find, the 2 classes that we already know will get a third are both martial classes, and spellcasters are getting shorted since wizard only gets 1 subclass.
As an aside.
Wizard: Theurgy, War Magic, Lore Master, and controversially Artificer. I am not sure, we already have a Divine/Arcane spell caster now in Divine/Favored Soul, and an Arcane/Divine caster in Arcane/Magic Domain Clerics. War Magic, we already have combat mages in the form of Eldritch Knights. Lore master is pretty much a skill mage, moving it close to Bard. And finally Artificer, it was originally printed as a wizard subclass in the Eberron UA and then later reprinted as its own class but neither version was super well received as far as I know. If I was going to shoot blind I would say Lore Master is most likely because we have a few options for Arcane/Divine casters and we already have combat wizards in the Eldritch Knight and the Bladesinger.

I would argue we could see Deep Stalker as that technically got a second pass in that it got included in revised ranger so we could see it again.
Monk way of the kensi was included in the revised set along with favoured soul and arcane archer round 2s.
Undying Light was replaced with celestial for warlock.
Also you missed off bard who has college of satire and college of swords which could be included.
A point I would like to make is there does seem to some themes around death and fae being in a good number of these subclasses and while it could be coincidence it makes me think we could see things like circle of twighlight, raven queen. I personally hope with wizard we get theurgy as it brings back an old 3.5 class the arcanist and while some people may complain about the number of divine/arcane casters the way wizard works is mechnically so different from every other class i still think it could be a thing. BUt we should find out this week anyway.

Anyone know if the Artificer is in XGE? One of my players uses it and is sort of core to the campaign and party now so it sucks having to half ass it in DND and have off DNDB things. Every level I have to go in and create custom spells and things for him.
None of the classes (mystic & artificer) are in this book they are still going to be tested (with new versions being put on the dmsguild) no new version is predicted to be done before xmas. The next big thing i think is finishing ranger revisions.

Oh wow...well that sucks - I preordered because I was told there was a very good change the UA classes would be in this one and my players use it so I bought it :(
Wizards have been very publicly saying this was the case both from mike mearls and jeremy crawford on twitter as well as in a big discussion they did of what was happening with UA on the site.
Interesting! For the Tomb of Annihilation, I wonder if Wizards will rewrite the surrogate Albino Dwarf Cleric to have a deity of Gond and the Forge Domain. If so, this means that two certain locales (partial SPOILER ahead) will give the ability to create armor and weapons from ingots. In one area, the party can acquire ten ingots and in another area they can acquire as many as twenty ingots per PC. This translates into forging a single piece of scale mail, chain shirt, or even a greatsword for every 5 ingots used. The Forge Domain Cleric, at level 2, could even make a suit of chain mail and a rapier out of the ingots found in the first area -- less than two-dozen hexes from Port Nyanzaru. Could also make two-thousand arrows made of that material, given enough time. I was just wondering yesterday if the rules for Forge Domain would be reliant on gold amount, weight, or both. RAW, this means a fairly-powerful capability for making uncommon, permanent items at a very-low level. The properties of these uncommon items including AC and benefits are fairly-outrageous. Might require some balancing. Perhaps the items turn into regular steel items instead? Or do you think it's well-balanced RAW?
The following domain options are available to a cleric, in addition to those offered in the Player’s Handbook: Forge and Grave.
The Grave Domain was confirmed on Friday (13 Oct 17) and is already in the OP.
This does show that Cleric will not get a third additional subclass in XGE (unless they edited it to not show a hitherto unconfirmed subclass), helping with conjecture of what else will be in the book beyond what is already confirmed.

New Wizard spell list revealed! http://media.wizards.com/2017/dnd/downloads/DnDXL2017_Spells.pdf
Most are just reprints from the Elemental Evil PDF - which makes sense, since they've never been printed in official physical content.
Even a blind squirrel finds a nut once in awhile.
I was not aware of the Extra Life rewards/previews.
Thanks for bringing those to my attention.
The OP now includes that information.
We're up to 18/27 subclasses and 83/95 spells.
Next week we will get the pdf preview of the Forge Domain then the full Table of Content as rewards on the Extra Life page.
I also reformatted the OP for a better ease of use (limited spoilers from 14 to 2).
The link in my signature has links to all of the UA pdfs under the WOTC Resources section.
