Though it isn't specific to the Zealot path. I think Zealot would be a ton of fun (and I am currently building a Barbarian with it). Though if you are looking to be more of a tank, Bear Totem would be the way to go. It limits your damage output potential, but you take basically half damage at all times while raging. With Minotaur you have great mobility and can stick onto people. With the Sentinel feat, you can lock down a lot of enemies. And if there's a situation where the battlefield has a ledge, you'll be getting a huge smile on your face as you gore enemies over it.
For a typical barbarian of the zealot path, how good is a being a Minotaur race? The Goring rush made it sound pretty appealing.
It would work quite well for the Zealot path, both from a lore-ish perspective and the mechanics you are given as a minotaur. Plus it would just be fun to play.

I can see this working quite nicely, especially if you take the bonus damage type as Necrotic for flavor, given the more monstrous race. Definitely something I would consider using myself if I ever make another Barbarian!
