Though it isn't specific to the Zealot path. I think Zealot would be a ton of fun (and I am currently building a Barbarian with it). Though if you are looking to be more of a tank, Bear Totem would be the way to go. It limits your damage output potential, but you take basically half damage at all times while raging. With Minotaur you have great mobility and can stick onto people. With the Sentinel feat, you can lock down a lot of enemies. And if there's a situation where the battlefield has a ledge, you'll be getting a huge smile on your face as you gore enemies over it.
For a typical barbarian of the zealot path, how good is a being a Minotaur race? The Goring rush made it sound pretty appealing.
It would work quite well for the Zealot path, both from a lore-ish perspective and the mechanics you are given as a minotaur. Plus it would just be fun to play.

I can see this working quite nicely, especially if you take the bonus damage type as Necrotic for flavor, given the more monstrous race. Definitely something I would consider using myself if I ever make another Barbarian!
Considering a Warforged Barbarian now that the Eberron content has been released.
A machine that is considered a living thing, capable of emotion, but was created for the Last War...he seeks a peaceful existence, but occasionally reverts to his combat functions during moments of extreme stress, which serve as his "Rages".
He also smokes cigars, which is unusual for a machine. Whenever someone asks him why he smokes, he simply tells them why not, and asks them why THEY do it.

Huh. I'm picturing a mix between the Transformers' Kup and the Micronaut Acroyear (IDW versions).
Now hear me out... Kobold for an ancestor guardian.
Kobolds only really attack when there is a lot of them, right? Well, what if one keeps putting debuffs on the target to keep them from hurting his fellow kobolds, making it both harder to hit them and make them so they can take a little more damage before they go splat? He himself is small and hard to hit too, and with his rage he would be able to take a few more hits before going down.
I made my own one of these boys (Youfurst Meatshield the 25th) and I like him so far. He has high dex so his unarmored AC is really darn high with his constitution, and he can hit really well with pack tactics when he attacks. He doesn't do that much damage, but he's really not made to, being the party tank and debuffer.

He is now my favorite Barbarian in D&D.
It's less mechanical, but...aasimar zealot barbarian. SO MUCH FLAVOR.
Ashley Johnson from "Critical Role: Campaign 2" plays an Aasimar Zealot Barbarian named Yasha.
She is socially awkward, passively badass, gothic and tough as nails.
Her first use of Necrotic Shroud was the highlight of the episode.
