You could make a Bardadin - a Bard X/ Paladin 2 or Bard X/Paladin 4 or 5. The Paladin levels get you a fighting style and all armor and weapon proficiencies. The Bard levels give you more spell slots to smite with. College of Swords, as already mentioned, would likely be best to get you 2 fighting styles total and some additional battlefield movement abilities. Lore Bard might also work if you want to emphasize the spellcaster aspect. Most of the Paladin Oaths can be reflavored to make a Hunter type character, though Conquest and Vengeance probably best evoke the focused drive of a witch or demon hunter.

My big question is "What do you mean by hunting?" Hunting in the form of tracking and killing a target? Then you're going to need to have some offensive push to finish it off. I recommend College of Swords. On the other hand if you're the more intellectual type of Witch Hunter, who looks into the people afflicted by curses and mystical ailments, then the Lore Bard with their strong counter magic capabilities would be a damn fine fit.
Personally, given that Image. I'm leaning into the Lore Bard as Witch Hunter who finds and locates, cures the curses and protects people from the things that go bump in the night. Leaning heavily into the abjurationist mindset and breaking curses and ailments while using a vast knowledge of Arcana and history to identify the hidden evil that hide among the good honest folk.
Now stepping away from Bard for a moment, That Spellbreaker Witch Hunter I mentioned would make a pretty compelling School of Abjuration Wizard. Just a thought.

How would this person go about hunting (not necessarily mapped to D&D classes and abilities)
Do they cast spells to do it, or use a weapon? Or sometimes use a little magic?
A Monster Slayer Ranger is the first thing that comes to my mind when I think of a demon hunter. A Swords Bard could also fit the bill though.

Probably by using magic, then killing them with both magic and their weapon. What instrument do you think would work?
