I'm trying to make a Changling Gunslinger but I'm having a little difficulty navigating the character builder to make it. I have my race selected and when I try to select Fighter I can't find anything that indicates a subclass toward Gunslinger. It gives the options of:
Archery, Defense, Dueling, Great Weapon Fighting, Protection and Two-Handed Fighting
I tried to find a 'noobs-guide' to building a gunslinger (like a step by step guide of what to select) and can't seem to come across one. Anyone care to help a noob who wants to branch out?
On the home tab, you have to have Critical Role content selected. Also, you have to be level 3 to pick a fighter archetype.

Those choices are for your Fighting Style, you don't get to pick your subclass until you are a 3rd-level Fighter. If you're going to be a Gunslinger, the Archery style is probably your best choice. :)
Ok might seem really dumb again but I'm having a little trouble finding firearms as weapons in the DnDBeyond website, so do I need to talk with my DM about what should the stats be or is there something that I'm unaware of when I should be looking for?

If you're talking about firearm specs as Matthew Mercer designed for his Gunslinger subclass, you'll find them in the class description in the Gunslinger section. I don't believe those items are available by searching any master list of weapons or equipment, since they weren't part of any official book release. I'm also not sure if you can add them as equipment on your character sheet, but you can search for them by name on the main site. Someone may have created homebrew items corresponding to each one, or you can create the homebrews yourself.

Pistol (Exandria) and Pistol (Exandria) Bullets
Musket (Exandria) and Musket (Exandria) Bullets
[Tooltip Not Found] and Pepperbox Bullets
Blunderbuss and Blunderbuss Bullets
[Tooltip Not Found] and Bad News Bullets
[Tooltip Not Found] and Hand Mortar Ammunition
And on your character, those should show up when you add items if you search for them (example below)
