Simple question here, how highly would you value this feat? It seems to me that is achieves much of what Sorcadin does through one ASI. However, my character is nearly tapped out for feats as I have Polearm Master, Warcaster & Magic Initiate (Sorcerer) so I won’t be able to test it (I don’t think).

You regain all spent sorcery points when you finish a long rest.
I'm taking it on my Paladin's next level at 16th. This way I can slip someone Hold Person and smash them into the dirt on the same turn.
He also has Wiz (Diviner) levels so they ain't making their save either.
Brutal, I love it! It is such a powerful feat, for pretty much any caster I feel. I actually think it is better than Lucky for anyone with spell slots, since the two sorcery points are the maximum, but you can still refuel them with spell slots.

Can you refuel them with spell slots? That's part of Font of Magic, not Metamagic, and it's not specifically called out as an option in the feat.
Nope, you cannot. You get two sorc points and that's it. the character has no means without being a sorcerer and getting the Font of Magic feature to recharge those sorc points.

Ah, if that is true, well that makes the feat considerable weaker for everyone but a Sorcerer. I had assumed that ‘Font of Magic’ would be at play as that is where Sorcery Points are actually explained.
In my mind, the general rules of Sorcery Points were at play... This was actually supported by the specific repetition that you cannot use these points for anything but Meta Magic, else you would presumably be able to create spell slots with them as that is not mentioned.
I believe the rule at play that could support my interpretation is ‘no hidden rules’, this feat implies you might have been able to use them for spell slots if they had not specifically negated that. As it doesn’t say you can’t refuel them with Spell Slots, there is some ambiguity. However, that would be an example of a hidden rule.
Rather, as Meta Magic isn’t explained there but in the Sorcerer and they felt the need to add a specific exemption. Being able to refuel them seems reasonable, and not hidden.
The feat does what it says it does and nothing more. This feat implies nothing about recharging. It allows you to select two metamatic options. You can spend these 2 sorcery points to activate those metamagic options. The sorcery points recharge on a long rest. The recharge is covered specifically under "Flexible Casting" as part of font of magic. The feat doesn't grant that.
That's it. I don't see how you can imply that there's some hidden rule that allows the points to recharge via spending spell slots.
For your build on a PAM Paladin, I'd consider this feat mostly useless. For a wizard or a cleric, I can see this being highly useful for situations when you need to do something clutch like twin a healing word, or quicken a spell. Quicken mind sliver, then drop a save or suck spell I could see being very potent on a wizard. Subtle spell could be clutch on a wizard or bard in social situations. Clearly not a go-to in all combat situations, but when you positively, absolutely NEED the meta-magic it can be there for you.

I can't find the answer to my question: How does the ability to turn sorcery points into spell slots work for the warlock? When you know that 2 socrcery points can make a first level slot. Do it scale?

This feat does not grant the ability to convert spell slots to sorcery points or vice versa. This feat allows for 2 Sorcery Points per Long Rest, and two metamagics. That is it.

Then you can multiclass into Sorcerer like most people do to make the ever popular Sorlock in which case the rules for converting spell slots and Sorcery Points follows the normal rules for conversion.
in order to turn sorcery points into spell slots, you have to have the Font of Magic feature from the sorcerer class. Warlocks don't really need more spell slots since they get most of their blastery goodness from eldritch blast and it's supporting invocations.

Example: 1.If you have the Meta Magic Feat from Tasha’s, but have no other sorcery points, as you are (just) a 1st level sorerer/4th level wizard multiclass, can you use your 2nd level or 1st level spell slot to create sorcery points?
2.If one was a 2nd level sorcerer too, would things change?
3.If this (point 1) scenario allows one to create sorcery points at all, is one even able to create sorcery points from the 2nd level spell slot or is one limited to just converting their 1st level slots (since one is a 1st level sorcerer)?

EDIT: For item 2, I am 99% sure that you cannot recharge those spell sorcery points with spell slots even if you are a sorcerer with Font of Magic.

Nah. Spending spell points to convert into Sorcery Points is exclusively part of the Font of Magic feature. This feat in no way grants that feature.
