I am building a Soulknife Rogue, If I multiclass with fighter and get to level 5 fighter for extra attack, can I use Soul Blade attack twice plus my Bonus action Attack?
The blade vanishes immediately after it hits or misses its target, and it leaves no mark on its target if it deals damage.
This applies to both melee and ranged attacks, so I would say you would not be able to make a second attack with the same blade.
I would argue that to be true, RAW...
But it can also up to DM's interpretation. As the blades are manifested as part of the Attack action, the Extra attack feature specifically says you can "attack twice instead of once", which is also stated under the Attack action definition (https://www.dndbeyond.com/sources/basic-rules/combat#Attack). But that means overlooking that the specificity of the wording on the Psychic Blades which seems written in a way to prevent Extra attack features, sadly. "Whenever you take the Attack action, you can manifest a psychic blade from your free hand and make the attack with that blade." → Meaning exactly that. A single use blade.
And well, if you were to throw the knives... They'd be gone for the Extra attack. But if your DM allows it, maybe the blades could last for your whole Attack action, not only for a single attack...

I'm sure there is another thread where that was discussed in greater details...
Edit: Found it https://www.dndbeyond.com/forums/class-forums/rogue/100268-how-good-are-psychic-blades-soulknife-rogue?comment=15 The whole topic is interesting but I linked where the specificity of the "A blade" was discussed
