I just leveled to 8 and am pretty comfortable with my stats so I'm looking at taking the War Caster or Spell Sniper feats. Most of the spells this character knows are attack based but they also have two or three concentration spells (haste, polymorph, greater invisibility). I'm torn between the two because they both have pros with the only con I see being I'm not taking the other. Thoughts? Opinions?
I'd say War Caster. The concentration buff is pretty key. Unless you're planning on getting cheesy with Distant Spell + Spell Sniper combo, I don't really see the benefit of this feat over having advantage on concentration checks. You can pretty easily deal with cover using AOE spells. And if you wanted extra spells, Magic Initiate or multiclassing would probably be better.

Note that since Sorcerers already have proficiency in CON saving throws, Warcaster isn't as clutch as it is for other spellcasters. Still useful, especially if you do a lot of Haste twin-casting. Also useful for the limited occasion where you can Shocking Grasp someone trying to run past you.
Spell Sniper is really only useful for spells with attack rolls, obviously - so if you use a lot of Firebolts and Scorching Rays and whatnot, it's helpful. So it depends on your playstyle and spell selection.
Personally, I don't see either as crucial for most Sorcerers. I'd sooner take a more "fun" feat.
