So I have a character named Crabperticus. It's like in Pokemon, where if a crab-pokemon uses bubble beam, and it comes out of their claw. He also psychically yells Crab Cannon.
As my patron is a fiend and based loosely on Stephen King's The Crimson King, my blast comes out looking like a clot of electrified blood with black swirls.
I usually imagine it quite blandly, simply coloured by the patron of my choice. I dabbled in something with my Eladrin based Half-Elf with the typical mood changes affecting her Blast but it's never been a huge thing in games I've played. As much as I love a bit of flavour, we've got 3-4 other people looking to get a turn out as well.
In Brimstone Angels, Erin Evans describes Farideh's fiend pact warlock's Eldritch Blast as a blackish-purple blast. So, for my celestial warlock , I go with bluish-white.

I describe the Eldritch Blast of each warlock that I play differently depending on the patron. My favorite one’s Great Old One patron appears as a violet flame so his are violet bolts of fire.
one way to scare the b'jesus out of the party for NPC warlocks is to describe the eldritch blast beam using the descriptions of Disintegrate: "A thin green ray springs from their pointing finger"

My DM allows me to change the look at times so sometimes it’s just a red flash of light or sometimes a hand-crossbow forms in each hand (1/blast) and the whole thing flies off at the enemy instead. I like styling them out and coming up with new ones. Usually they sound like Star Wars blaster shots or Tie fighter shots.
My character is a Celestial Warlock in service of the god Ilmater, who's symbolized by wearing red strands tied around the wrist. So I visualize his casting to resemble the red strands extending outward and warping into bolts of energy. In a similar vein, his pact weapon appears and vanishes from the strands in a similar fashion.
So my DM and I created a special Fiddle Bow that would allow my Bard to cast Eldritch Blast while playing the fiddle. Since my hands are obviously busy playing the music I described slits in reality that appeared in the air around me like eye lids opening and then beams of semi-translucent force firing out at targets.
My yuan ti warlock's eldrich blast looked like green spectral snakes, I didn't tell the party I was a yuan ti until the end of the session, they were confused when the dm asked if a poisonous gas affected me.

I've flavored mine to look like green slashes of energy out of my weapon very similar to Cloud's Blade Beams in Smash Bros.
Daggers formed out of solid, silvery, moonlight. Hexblade with Eilistraee('s Moonblade) as a Patron.
