Have a player Whois multiclassing into Warlock. When he can pick it up I will be recommending that his blast looks alike a multi-colored ball of spores with a slight smell of rot as his patron is connected to fungus.
"You summon X wisps of purple energy hovering near you, and with a twist of a finger, they spring onto the enemy in quick succession". Even cooler when multiclassed with sorcerer, since X is doubled. Pretty much how I always envisioned magic missile.
I always imagine it as a colorless clear beam that just creates a distortion of whatever is on the other side of it when looking through it because it's force damage. Sorta like how cloaking is in planetside 2, or a lot of other games.
Maybe as I become more focused on spreading death, as my goal is to make sure death happens as it should and to prevent resurrection, immortality, and undead from existing it gets darker through it]
Working on a Noble Genie / Bard multiclass where my character, Pasha, is an artist who caught the attention of a noble djinn who had been disguised as a mortal during one of his performances.
His eldritch blasts are mostly crackling bolts of electricity that can assume the full spectrum of colors...as equally mesmerizing as they are devastating.
The real fun is with the "Grasp of Hadar" Eldritch Invocation...when the crackling beams strike an enemy, they transform into spectral manacles or shackles, which then proceed to yank the target in the direction of the caster before disappearing.
When this happens, I flavor that the soft, amused laughter of my patron resonates somewhere from my warlock.
I've played two warlocks. One was a fighter multiclass nicknamed "The Glass Knight". His Eldritch Blast looked like translucent daggers flying from his hands and shattering against the target. Once he got Agonizing Blast they penetrated the target before shattering.
The other one is a Hexblade I'm playing now. I describe his Eldritch Blast as the absence of space, a beam of an irregular and unknowable shape which subsumes light and matter as it passes through the world. Picture it as the reverse of a bolt of lightning, shadow rather than light, draining rather than energizing, implosive rather than explosive.
My Warlock is a hexblade variant that fights with a rapier and buckler. His Eldritch Blast is a barely perceptible distorted ripple of air that runs down the blade and sends out the waves of force.

His EB is a small, glowing dart, deep purple in color that flies directly at the enemy, with glowing white motes of light trailing behind and falling down. A "royal" purple is his theme color, and the trail is to evoke a sort of "Disney-genie" image. (He tries to be light-hearted even when blasting demons.)
The shadow of warlocks pointing finger suddenly surges forth from the ground as four sharp tendrils that pierce his enemies. A little bit like Pride from full metal alchemist or Shikamarus shadow sewing jutsu.
I'm a gnome warlock and my patron is Lucky the leprechaun.. so i have to roll a d8 every time i cast eldritch blast to see which marshmallow shape from lucky charms my blast looks like..

my patron is a solar called the angel of burning embers so my eldritch blasts looks like an orb of coal with deep orange/red energy running though it
a ball of light made of force energy.
Each beam is a crackling teal arrow wreathed in flame that breathes into being when my Hexblade pulls back her bowstring.
Purple ball of flame filled with ephemeral black butterflies.
