Can someone tell me if I'm interpreting this right?
DNDBeyond allows users to create whatever they want as homebrew content. Direct plagiarism restricts you from sharing the content publicly, but if you run a campaign you can still share it with https://vshare****/ your party. (Not sure if that's a subscriber perk.)
So... What's stopping me from copying any official feat, spell, item, or whole subclass for my players to use?
Leaving OGL 1.0(a) untouched and making SRD 5.1 CC-BY-4.0 is a great first step. The next is a promise to do the same for future editions. Here's a discussion thread on that.

There's a handful of things that can't be homebrewed as they were programmed on the backend to allow for functionality, such as a Hexblade's Hex weapon or a Monk's dedicated weapon. I'm not sure if a strait up copy of those keeps that backend functionality intact. I know you can't recreate a Hexblade subclass from scratch.
Also the Artificer class isn't available unless you purchase something, be it one of the source books it's from or just one of the subclasses.
If you add a subclass feature named “Hex Warrior” to any subclass it’ll recreate the feature, you just need to add the modifiers for the weapon & armor proficiencies to it.

So it's hard coded off the feature name, interesting. I'm assuming it still only changes the attack to be CHA though, right?

Nothing is stopping you. It's even straight-up allowed, explicitly.
Sharing homebrew is a subscription perk for Master tier and while I can't tell you what to do, I personally wouldn't subscribe to ddb right now.

DDB is great, but it could be better. Here are some things I think could improve DDB
This isn't accurate; homebrew content is shared for free within any campaign you're a member of, and can also be published for free.The only homebrew feature that requires a subscription is adding published homebrew to your collection, which requires a hero tier subscription
