Click on the "defenses" box on the character sheet (web, not app; it may be doable in the app, but I haven't looked)
When the sidebar comes up, you can click on customize, and add resistances and immunities.
However, resistances and immunities usually come from somewhere, and you may be better off homebrewing the source so it grants the resistance, particularly if it's from an item.
On the character sheet (on the web, not mobile or app): in the upper right next to the AC and HP is a section that says 'defenses.' If you're only going to grant them a single spell, it may be easier to homebrew a feat that grants the spell (usually made by using Magic Initiate as a template). You can check out the FAQ in Sposta's second link for details on how to do that also.
I may be blind, but i cant actually find where to add resistances to a character.

The reason you cannot find any information on how to “add a a ‘spells’ tab” to a monk is because you cannot add a “spells” tab to a monk. You would have to create a homebrewed version of the subclass and give it the Spellcasting feature, and then it will get the same identical spellcasting progression as the Eldritch Knight, and there’s no way to change it.
