There isn't a RAW reason why you can't. If your Hexblade gets to level 3 and takes Pact of the Blade, then you'll have the options to make the Staff of Striking your Hex & Pact Weapon. In the meantime, you can add a quarterstaff, +3 to your inventory to use for making quarterstaff attacks.

Make a homebrewed magic item using the staff of striking as the template and change it from a “staff” to a “weapon” and select Quarterstaff as the weapon type. You may or may not need to add a magical bonus to it, I’m really not sure.
I figured there wasn't a RAW reason, my DM and I poured over the rules to make sure. Thanks for the suggestion! I've already gone in and customized the bonuses on the weapon to give the pact bonuses I would otherwise receive. It would just be nice if D&D beyond could solve this on the backend so I could have the handy check box instead of having to do the math myself 😂
Staff of Striking doesn't give the options to make it a pact weapon or a hexblade's weapon. Pretty sure it's eligible. This is the character it's not working on.

Staff have been made aware, but it's Thanksgiving weekend, so unlikely anyone will be able to take a look at it until next week.

Still not fixed -- you shouldn't need to homebrew or use a workaround to fix something the staff was made aware of in 2018. Please fix this mistake.
