When I go to edit character, it brings up the menu to select race/class/etc instead of the existing character stats. Had this problem the last few days.
This is correct. The character builder is where you can edit a character's preferences, race, class, abilities, description (particularly background), and equipment.
Edit character is for either gaining levels and choose class features or changing character creations decisions like Race, Class, Starting Ability Scores, etc.
If you are just trying to add spells or equipment, then you can do that from the character sheet with "View Character"

Turns out, the layout merely changed, and I needed to click the right blue arrow to actually make the edit. Poor perception on my behalf. All is well.
