It has now been a little over a year and this bug has still yet to be fixed. I absolutely love this toolset. I'm a quadriplegic who can't manipulate a paper and pencil character sheet or physical sourcebooks, but I can manipulate a computer. I am grateful for the accessibility to the game of Dungeons & Dragons this toolset allows me and I know complaining makes me seem ungracious, but you'd think a small bug like this would have been fixed by now.
I am having the same problem with gnome illusionist. However, I am playing in the Adventurer's League organized play campaign. Homebrew is not allowed so this workaround doesn't work for me. I understand it's a long-standing issue and requires some code reworking but I would rather have things like this cleaned up than making digital dice to roll on my screen (that personally I never use).
So, to me, let's not get ahead and make unnecessary additions like digital dice when there are issues like this that paying customers have been bringing attention to for years.
I cannot do this even if I wanted to violate Adventurer's League rules. When I go to create the subclass the only template I have is the School of Evocation. Myself and a group of friend's all chipped in so we could afford the Legendary Bundle. We share those books in our shared campaign but I am not the primary owner. I am guessing this is why it only gives me the Evocation option even though I can access all of the books when making characters through D&D Beyond's policy of book sharing.
So, is there another option for those like me other than to continue to wait until this is fixed?

You can ask whoever owns the PHB to make the variant for you (it doesn't need to be published to be shared in a campaign).
As far as AL rules are concerned, it is made using homebrew tools, but follows the rules, so it allowed.

Ah, I misunderstood you initially, I think....I missed that you were asking about having subclasses available as templates in the homebrew editor. Yeah, that's limited to content you actually own, not shared content. But DxJxC has given you the solution: ask the owner of the PHB to make the homebrew you need.

When I picked my wizard subclass at level 2 I chose School of Illusion which says: improved Minor Illusion PHB page 118
When you choose this school at 2nd level, you learn the minor illusion cantrip. If you already know this cantrip, you learn a different wizard cantrip of your choice. The cantrip doesn’t count against your number of cantrips known.
When you cast minor illusion, you can create both a sound and an image with a single casting of the spell.
The D&D beyond character sheet is not letting me pick another wizard cantrip of my choice.
