The option to build characters using the EGtW Elf variants has suddenly disappeared. I had access to them until two days ago, then they all vanished as playable races for me. I Checked that Ebberon content was turned on, still nothing. I checked sourcebooks and I can read everything just fine. In the store it’s acting as if I did purchase it, but in the builder it’s acting as if I didn’t.
It sounds like the WGtE is being shared with you via one of those campaigns, which is why you're able to read it.
You'll only be able to use the subraces from it on characters that are in the campaign that's sharing that content.
You can find out which campaign it is by editing your character in the campaign and clicking on "change race" and checking which elf subraces are visible. Be careful to cancel though and not change your character race (unless that is planned).
So if we had them before, we now have to purchase them?
In short - no, you won't. If you have any characters that were using either elf subrace for free, as part of the Unearthed Arcana playtest, they will continue to be able to use that subrace without making any purchase.
They're an officially published subrace option.
They were originally included for free as part of an Unearthed Arcana playtest article. That playtest has concluded and the content has been archived (thus can no longer be playtested for free).
If you wish to make any new characters using either subrace, or to change the race of a character to either elf subrace, yes, you will need to own the subrace on D&D Beyond, or have it shared with you via a campaign.

A few questions:
Have you bought WGtE or the elves out of them?
Can you read WGtE or see the aereni/valenar subraces on the elf race page?
Were you in a campaign with content sharing?
Not that I recall.

Three, but nothing in any of them has changed as far as I can tell in over a week, and the last change was adding a player to one of the campaigns.

That was it, but strangely, before, I could make those characters even outside of that campaign.
