First of all I am not positive if asking questions regarding Foundry VTT is allowed, I understand that this could be an issue with Foundry, VTTAssets, or DnD Beyond, but I think this is a good place to start.
I purchased the Lost Mines of Phandelver source material on DnD Beyond and have had no trouble importing the information into foundry. I have the maps and the journal entries so I can build my scenes. The problem comes when I want to import the monster stat blocks included with the adventure, they do not import as actors they simply come as journal entries. I know that I can buy monster stat blocks individually and I don't really have a problem doing that, but I wanted to make sure it was entirely necessary before making the purchase. Is this an error with DnD Beyond or Foundry, because they are right there in the material I have imported but are not separated out as individual monsters that I can assign to actors.
This is my first adventure as a DM, my first purchase from Beyond, and the first time I am running Foundry, any and all help and recommendations is appreciated. Thank You!

D&D Beyond does not officially support any tools used to export content to 3rd party VTTs. I'd recommend contacting the Foundry VTT discord about it.
