Keep in mind that you can split up the costs among your group by having different people buy a book each. As long as one person person has a master subscription and sets up a campaign with content sharing enabled, you will all be able to access each others content for creating your characters.
I don't know if this has already been asked, but does anyone have a recommendation for what are the best books to buy if I want more monsters? I'm also always looking for one-shot / short adventures that I can reskin to my world and tie in to my campaign.
If I buy the subscription, does that unlock all the source books for more options in the character builder?
Or do I have to purchase each book as well to get the options?

1. No, a subscription only allows unlimited characters to be created on your account and disables advertising on the DDB website for the Hero tier. Master tier also allows content sharing in a limited number of campaigns. For further information, feel free to look at the Subscriptions page in the Marketplace.
2. Not necessarily. Reading ArwensDaughter’s post at the very start of this thread should let you know what options there are for your circumstance.
If spells or subclasses or etc overlap in books is that content overlapped as well so i can buy one book for all the things in it and the things that overlap in a book id only buy onesies or 2ies in it? IE the new book tasha's culdrin of everything has a rehashed bladesinger in it would i get that subclass from in digital form as well?

If you buy Tasha’s (or any other source), you get all the content in it, including blade singer. When buying inidividual items (like a just the blade singer subclass), you must buy it from the first book it was published in. It is not available for individual purchase in later books it is in. But buying the whole “book” gets you everything in it, including overlapping content.

For Bladesinger, it's also worth noting that SCAG was errataed to include (I think) the same changes to Bladesinger that appear in TCoE.
Note that if you buy the Essentials Kit physical box set (e.g. from your local game store), it does include a code that unlocks the entire Essentials Kit Bundle on D&D Beyond for no extra cost, as well as a 50% off code for the PHB on D&D Beyond. If you wanted, you could buy the product that way and then give either or both of these codes to your friend, and then they could redeem the codes on DDB. (See this help page if you/they have trouble redeeming the code; try swapping any letter O in the code for the number 0, and any letter I for the number 1; printing issues can sometimes make them hard to distinguish.)

Ultimately, what you buy is entirely dependent on the setting you're running, and what monsters you want to fill the world with. For example, Mordenkainen's Tome of Foes has a whopping 120 stat blocks, but it's a lot of demons and devils and stuff because that's the focus of the book. Other sourcebooks may only have a few options with scattered themes.
If you're looking for monsters as inspiration, you can start anywhere, but my suggestion is Volo's Guide to Monsters as your first purchase if you're just looking at grabbing something. It has a large variety of interesting critters to throw into games. For adventures, Ghosts of Saltmarsh and Tales from the Yawning Portal are "anthology" style adventure books, with miniature modules/dungeons wrapped up in a single book without any cohesive narrative. They're somewhat specific, though. Ghosts is, well, ghosts and pirates and naval adventures, while Tales is a collection of popular dungeons from the past updated for 5th ed. Those are the only D&D official books with "drag and drop" pieces, but you could always get real creative with your reskinning and pull parts from any adventure.
Also, in case you haven't explored and figured it out in the marketplace, always remember that you don't have to purchase the WHOLE book; you can just grab the monsters, if that's what you need, for a much more reasonable price, with that money going toward the total cost later if you want the whole thing. If I want to buy some content from Tasha as separate pieces (spells and feats, for example), what do I need to buy to get Variant Class Features? Those aren't part of a subclass, and there is no separate item for them.

I'd recommend contacting dndbeyond directly (contact link at bottom of the site). It wouldn't hurt to have additional piece purchase options. If it's not already a planned option knowing there is demand for it will help in deciding on adding the option.
