I own all the books besides one or two adventures and really don't want to have to buy everything twice. Is there something I'm missing that will allow me to unlock a digital version of the books that I own?
Really I just want to be able to use D&D Beyond's tools more than needing the digital versions of the rulebooks. And as a student I don't really have the funding for the series of double-purchases that seems required to use the platform.
Failing that does one of the subscription plans include the ability to use all the tools without having to buy the digital books?
Others know much better than I, but if I remember correctly to get the full use of the dndbeyond tools you have to purchase their digital version of the books. No subs would allow you access to the material, but joining a campaign with a DM or another player who has the master tier sub you would gain access to any material they have purchase and unlocked, while you're in the campaign with them.

If you're mainly interested in the character builder you can manually recreate any game features you're missing as private homebrew.

Nope, though as Jusblazm mentioned the Master Tier subscription lets you enable Content Sharing, so if you join a campaign with players that own books everyone can get access to each other's purchases.
In your situation, I would advise either home brewing or making individual purchases of needed elements (subclass, race, etc), or a combination of the two. The buyers guide link in my signature might be helpful to you in terms of thinking through what you most need here and how to achieve that within your budget.
Homebrewing any kind of race/subclass you want is the best way to go if you don't want to spend money.
D&D Beyond gives you digital resources, so sadly you don't get anything for having the physical books. I'm hoping that maybe in future books they'll give a coupon code in the physical books for discounts on the D&D Beyond book or something.
