Way of the Long Death Monk level 11+. If you have Ki points you can't die.
So half orc, shadow sorc 1 (take utility spells, shield, booming blade ECT.) Undying warlock 6 (I'm thinking false life for temp hp, maybe devil's sight because why not, maybe pact if the blade/imp pact wep quarterstaff) long death monk rest of the way. Focus on dex and con(maybe use mage armor till you get Wis up) your pact staff counts as monk wep for martial arts. Probably take monk 1 before lock lvls so you can dex quarterstaff
I wouldn't bother with Warlock 6 if you're only purpose is number of times you can cheat death.
Half Orc 20 Long Death Monk can cheat death 21 times. Sure they wouldn't get to spend their Ki on anything else but they could. Cutting 6 levels off your Monk for Undying Warlock removes 5 cheat death possibilities. You lose 6 to gain 1. Also - Monks get their Ki back on a Short Rest whereas the Undying Warlock's and Shadow Sorc's cheat death's both come back only on a Long Rest.
Basically the only rival for cheating death of a Long Death Monk is the Zealot Barbarian 14+.
Half Orc Relentless Endurance (stay at 1 HP if you would go to 0, 1/long rest)
Monk Way of Long Shadow Level 11 (stay at 1 HP for 1 ki point)
Barbarian Level 11 (stay at 1 HP if you make a Con save, increases in DC each time)
Barbarian Zealot Level 14 (you only die if still at 0 HP once you finish raging)
Sorcerer Shadow Level 1 (stay at 1 HP if you make a Cha save, 1/long rest)
Artificer Level 20 (stay at 1 HP if you end an infusion)
Druid Wildfire 14 (stay at 1 HP, 1/long rest)
Fighter Samurai 18 (you get to take an extra turn, then only die if still at 0 HP, 1/long rest)
Paladin Ancients 15 (stay at 1 HP, 1/long rest)
There is also a cheeky shenanigan with Contingency and Revivify but requires you to be Wizard 9, Cleric 5.
I think the most per day would be maximizing your Ki points for Long Shadow monk. But start with Shadow Sorcerer so you get two delays for levels 1-11, instead of just 1.
Another side in favor of the warlock people seem to be forgetting. Tomb of Levistus. Sure it doesn't say "not die", but Undying Warlock 7, 70 temp hp as a reaction would be a good fall back measure. After all of the others have been exhausted. So, so far Undying Warlock gives you 1 class feature, 2x Death Ward, 1 Tomb of Levistus.
I am happy though that the fluff of Undying and Long Death can be somewhat connected, so a Monk + Warlock MC can be explained.

What's a build with the most possible times per day to just not die when I would die? I just like min/maxed gimmicky build.
