Gnolls by far. I love their connection to demons, alien mind, different and cool stats, and the lore is amazing if you look at volo’s. I also like flesh golems because of the frankenstein vibe.
Well, of course dragons are my favorite first off. From that little faerie and pseudodragons to the beastly drakes and Wyverns. From the standard chromatic and metallic dragons to the rarer gem, catastrophic, and planar dragons. Even the more obscure dragons from various points of D&D history. I also include Dragonborns and Kobolds in here as well. Dragons are my favorite creatures of all time regardless of franchise.

The Flumph. Weird little hover-jellyfish thing. The only Good aligned monster in the old Fiend Folio. Highly intelligent, telepathic, and just such an odd thing to run into in the Underdark.
Almiraj. Bunny Rabbits with Unicorn horns. Little hoppy animals. Cute. Amusing unless you run into a whole bunch of them and you are on the pointy end.
So basic, but goblins. Their simplicity while also being able to be used in really intense encounters. Anytime you never know, will these goblins be bait? Will these be commanded by a greater group, or are they just a bunch of idiots attacking someone way stronger then them? There are so many options.
Warforged Colossi are also up there.

A New DM up against the World
I'm not sure I have a favorite to be honest. There are so many cool ones.
But I do want to give a special shout out to Harpies though, considering I came across some in a video game.
I thought the encounter was really cool.
