Because surprisingly this site uses the content created by WoTC. If they say that the only race prereqs can be the official ones we’ve used. Then that is it. Doesn’t matter how many more races are added. WoTC gets to decide what their content is used for on an officially licensed site.
Since there are races you can select for making racial feats that are not prerequisites for any of the official feats then it does seem the intent is to allow you to choose any race as a prerequisite. D&D Beyond has free reign over this - it's a homebrew thing, not an official thing. Saying it's WOTC's decision is demonstrably false.
None of the races from the most recent books such as MOoT or EGTW are available. It seems most likely this is an oversight. I'm guessing this wasn't coded up with any forethought so new races are not added automatically and must be manually added to the prerequisites list and they simply haven't done so for the last few books.
It's not a big deal since people can override any of the feat prerequisites anyway, and you can still add in a custom text prerequisite instead. It would be nice for the system to enforce the prerequisite though, I guess, so it doesn't show on the list of feats when the character isn't the race and you've got prerequisites set to on.
I doubt it'll be resolved anytime soon though. It should be a small and easy job but then it's also going to be super low priority. As I said, not a big deal, though.

Do you mean supernatural gifts and piety? I believe that both would come under the category of "general features system" which is "next up," once they have their current "in process" tasks done. I know it's been too long: so do DDB staff.

With the way WOTC is releasing character options (every three months or so, it seems) it almost feels like if the feature isn't part of the initial release, then it goes to the "pending" and never moves forward.

Actually, I was referring not to the Trello roadmap, which as you said is out of date, but to Adam’s Developers update last week, where he listed it as upcoming. The hope is that the general features system will help “future-proof” things going forward so that when WOTC adds a new mechanic like piety or supernatural gifts, it will much easier for DDB to add them.
I found a funny portrait bug or perhaps a mislabel. There is a Leonin image among the "Variant Human Portraits". I can't seem to figure out how to upload the screenshot I took. The image is about 55 down and 3 over from the right.
I'm not seeing MOoT on your account - are you accessing via content sharing? Is the character sheet connected to a campaign with content sharing on where they are recieving access to MOoT?
This seems to have resolved the issue! I have access to MOoT through Content Sharing, so I now see that in order for me to access it in Character Builder, I need to make a character through that campaign! Thanks!
