Like No matter what I do, ticked “Level” in “Spell Prepared Type”, or tried to grant the Spellcasting feature at level 1. It just doesnt seem to work and the “Extra magical Arcane trickster” I’m making is still just a ⅓ of a wizard.

No. The spell slot progression is hard coded into the class. You can never make non-spellcasting classes have full spellcasting progression.
The closest is create "limited uses" features that can add the spells and charges, but this will be incredibly clunky, difficult to use, won't combine with the spells system properly and will be confusing to make and use.

You're running at this from the wrong direction. Make a Wizard that gets extra proficiencies and a sneak attack instead. It's the same thing in the end as long as you work all of the modifiers and bonuses correctly.
I looked through the FAQ but, could not seem to find an answer (maybe I missed it?) and, respectfully, did not want to look through 71 pages of comments, so I apologize if my question has been addressed before. With that out of the way, is there a way to make an item where certain information is hidden to the player? I know spoiler tags are supposed to do that, but I found out through some messing around that my PCs can see all of the spoiler tagged information if they have the item and just go to the character sheet editor! I thought maybe it was because I (the DM) made a character and so through DM privileges I got to immediately see past the spoilers, but I tested with my friend, and it seems to work the same.
Hopefully I explained this in a coherent enough way (its 1:36 am for me so I'm a wee bit sleepy.)
Do I just ask my players to respect the honor rules or is there a way to fix this proper?
Make a copy of the item and omit the text you don't want. Give that to the player. If the original was also a homebrew item you can remove it from your collection so they cannot add it. When ready to give the proper version find it in your creations and add it to your collection.
If the item is from a book there's no way to stop them adding the item and seeing it, so you just need to ask them not to. Although they'll know what to add if you tell them the real name - instead make the homebrew copy and give it a new name. They won't know to then look up the real/full version.

Usually this happens because one of your description or snippet fields is blank (or very short). For some reason, Circle of Spores is the one that gets called out as being "too similar" to something that's blank.
Also, I'll mention this just because a lot of people seem to not be aware of it: publishing is only necessary if you want strangers to be able to use it. You (and anyone in your campaigns) can use it without publishing it.
Adding onto this, it would seem that when you're making a new subclass and do not click "save" on the main Subclass screen (as in only saving each feature individually and not the main page of the subclass), then the subclass will also display as "too similar to Circle of Spores".
So I'm trying to make a couple of new home brew monsters, but when I go to make a new monster, and use my previous one as a template to build from, it ends up overriding it as a new version rather than saving it as a new creature entirely. I want to make it clear that I am using the "create new monster" button and not "create new version".

Only thing I can think of that would be causing it is that I'm using "Create new monster" from within the statblock rather that going out to My-creations first, but I just tested that and it worked correctly... :/
2. How do I create a temporary/activated effect that only applies to the character sheet when turned on, and only until turned off again?
This Is accomplished by creating two different features at the same level with the exact same name. One of the features only has a description and is designated to “hide in sheet,” the other includes the relevant snippet, a single selectable Option, and is designated to “hide in builder.” Since the feature with the Option is hidden in the builder and only visible on the character sheet, when players click/tap the feature and when the sidebar slides out they can select their Option there to activate the effect, and deselect it when finished. Options attached to subclass features and species traits can have Actions, Spells, and Modifiers just like base features/traits. Unfortunately both features will display on the details page for your subclass.

Could I get some help with an ice-based blood hunter subclass built around Frozen Armor that gives you overhealth.
Did the system recently break/change the Replace Weapon Ability modifier?
Nothing I do seems to get it to work, and while I know I've gotten it to work before... It's just not right now. Any help?

Is it possible to grant a bonus to JUST ranged attack and damage rolls, or exclude melee attack and damage from a bonus?
Just in general, working on an item that would ideally give the bonus to all ranged attacks and damage across the character sheet, spell or not
Ah, so it would only work if the magic item was a weapon? or does the Ranged Spell Attacks modifier subtype not work?
