 A “monster” and there are four types:

Spellcaster - Healer
Spellcaster - Mage
Expert
Warrior

 Have you purchased either The Dragons of Icespire Peak adventure book, or at least the monsters from that book? If not, the options from that book such as Sidekicks will not populate the field for you.

I purchased the sidekicks a la carte from The Dragons of Icespire Peak, thinking I'd be able to extend them in homebrew.

 You should be able to. Go to “my accounts” and see if it says the purchase is synced, or if it gives you an option to resync it. If it says that’s synced, try logging out, clearing your browser cache, and logging back in.

If you just purchased them it might take a little while to push the data for you, if you purchased them an hour ago they should be options for you by now. Try going into a character sheet and loading one under Extras. If you can, it might just take longer to populate the homebrewer. If you still cannot access them even there, file a claim with: Support. Good luck!

I'm not seeing 'my accounts', but perhaps you mean 'my account'. There, I can see that I've purchased the sidekicks. Where is the sync info located? Also, I can add a (non-homebrewed) sidekick to a character sheet, but I still don't see the sidekick appear in the homebrew area.

Maybe that one is ineligible? I have not purchased them, so I cannot test it for you.

That makes sense. I'll reach out to Support. 

It doesn't appear that you can homebrew a sidekick, but the templates give you room for customizations, so you can at least make the sidekicks unique.

 Hunh. Thank you for the information.

Support hasn't replied; this is just what I'm discovering in setting up a few sidekicks.

Gotcha. Like I said, I haven’t purchased that source, or those materials so you would know more about those than I at this point.

Sidekicks are pretty cool. I'm running a side campaign online for 2 friends, and I'm looking forward to experiencing how sidekicks live and breathe (and die).
