Count will take the long sword. I think I have Count set up like he has warcaster and he doesn't. At some point I must have interpreted that the S component of GFB and BB would be done with the weapon wielding hand so he could carry his shield and still cast those. So I think I need to drop the shield for now. Might as well use a versatile weapon then.
Nadir has been throwing daggers and a javelin or two. Honestly, I didn’t keep track of those. Perhaps she can take the three daggers to fill up her reserves and buy a new set of ten javelins for 5 gp. Also she, I wonder what is the rule for fighting with shortsword and dagger on horseback. I’m not sure if that would work in reality but does it work for us? If not, I have to think what other weapon she could use, a spear or javelin perhaps, and two-weapon fighting would be lost.
Count would like a another healing kit (I like to keep double digits of doses of them)
What are people's thoughts if Count is going to go 2 handed, go all out and get a maul (10gp) or stick with the longsword so if getting bashed the option of the shield is there?

If I haven’t offended you, don’t worry. I’m sure I’ll get to you eventually.
After selling everything and buying two healing kits you have got 27 pp, 1506 gp, 26 sp and 55 cp. You want to spend 1500 gp and 10 pp for the +1 amulet of the devout then? Cause we can do that.

Probably should start considering what items we need (magic weapons to overcome immunity to normal weapons) . But I'm not sure what would amyone sees as being a "need".
I'm good with spending the money for the amulet. Nadir got her full plate which is worth the same amount of money. Yoku has a bow +1 for magic damage and deals most damage of us.
It kinda depends on how fast time flows there anyway. Do we fight several times a day (given that we get short rests) or a few times a week (like if we were playing with grizzly rules and short rests are a night's rest and a long rest lasts a week)? I guess a griffon needs a few years to grow up normally. I found the following after a quick search:
Eagles are able to fly after 9 weeks, then is fully mature at about 4-5 years old. Lions reach maturity by the age of 2-3 years old. I would say, based on the fact Griffons are large creatures, and you want a medium pc to ride it, it will need to be fully matured before it can be ridden.
Considering the size increase, and the age of the animals that make up it's fictitious parts, I'd say it takes about 16-20 weeks to be able to fly, then ~4 years to be able to carry around a medium race. As an added bonus, I would say it could carry around a small creature after ~1 year.
The young Griffon that we have befriended is still small (so a small creature still can't ride it) but is already able to fly, therefore it would be somewhere between the 20 weeks and the one year mark, perhaps at an age of some 40 weeks. From that point it would miss still 12 weeks from being medium sized and 168 weeks before it is large. Even if the potion cuts that in half (or chops it down to a quarter), it still requires a long time for it to be able to serve as a mount, but it would be rather quick (if a long rest lasts a week) for it to become a medium sized aid in combat (like the dogs). Bottom line, I'd say after 3 long rests it can become a Young Griffon (Medium) and after 42 rests a Griffon at which time it certainly got enough practice to be used as mount (here I assumed we do week long rests and the potion cuts the growing up time to a quarter).
Up till now we’ve been using regular resting rules, but from several points of view it does make sense for you guys to actually only be fighting a couple times a week. Since using the alternate rules won’t really change the amounts of fights in between resting anyway we might as well.
So if everyone is good with that I’ll start a note in the campaign notes tracking the long rests.

Griffon Taming Goliaths of the Akannathi clan can learn to raise and tame griffons using secrets passed down through the generations. The clan's griffon trainer, Rahi, shares these secrets with clan members who show great wisdom. The goliaths don't ride the griffons; rather, they train them to hunt like falcons. The griffons are taught to respond to goliath whistles and never stray too far from their masters.
A goliath character who earns Rahi's respect can be taught the secrets of griffon taming over a period of 1 year, during which time the character is entrusted to watch over and protect a single griffon egg and, when it hatches, the emergent griffon youngling. At the end of the year, if the griffon is still alive, the character must make a DC 15 Wisdom (Animal Handling) check, with advantage if the character accepts Rahi's guidance. If the check fails, the character is unable to tame the griffon. If the check succeeds, the character tames the griffon and bonds with it for life. Control of the griffon can be given to the goliath's player at this time.
Modify the griffon stat block as follows to account for the young griffon's development:
At birth, the griffon is Tiny and has 5 (1d4 + 3) hit points, a flying speed of 40 feet, and a Strength score of 2. It has a +0 bonus to hit on its attacks and deals 1 piercing damage with its beak and l slashing damage with its claws. Its challenge rating is 0 (10 XP) .
After 1 year, the griffon is Small and has 13 (2d6 + 6) hit points and a Strength score of 8. It has a + 1 bonus to hit on its attacks and deals 2 (1d4) piercing damage with its beak and 2 (1d4) slashing damage with its claws. Its challenge rating is l /4 (50 XP) .
After 2 years, the griffon is Medium and has 32 (5d6 + 15) hit points and a Strength score of 12. It has a +3 bonus to hit on its attacks and deals 4 (1d6 + 1) piercing damage with its beak and 6 (2d4 + 1) slashing damage with its claws. Its challenge rating is 1 (200 XP).
After 3 years, the griffon is fully grown and tame enough to be ridden as a mount.
This means our griffon is at least about a year old and needs at most two more to grow up. Or 27 to 52 weeks to be medium sized and 53 to 104 weeks to be fully grown. Again assuming it grows four times faster, it would need 7 to 13 long rests to be medium size and 14 to 26 rests to be large. Slightly different and lower numbers but for me it doesn't matter. We can use whichever you prefer @Smoke_and_Oakum but I wanted to share the official information just in case it matters to you.

Nah, but I am curious if there is a +1 Amulet of the Devout available? And if so, at what cost?

An animated shield is only 6k
Honestly, I would keep the shield, knowing that the longsword is versatile and if you loosen the shield strap you can get 1d10
I think we decided 1600 gp.

I don’t want to drain all of our finances on me. Is there other items others want first? I can wait.

I found official rules in Rime of the Frost Maiden on griffon training. Chapter 2, pages 163.

Hey this works as well. I had no idea there were official Griffon training rules.
Im thinking it’s probably halfway through its second year so maybe (with the potion’s help) 10 weeks/long rests to medium and 20 to large?
If I haven’t offended you, don’t worry. I’m sure I’ll get to you eventually.
Ok, so Dolrik gets the +1 amulet of devotion I think it was, and we’re ready to go aye?
