As Tim said, it's just whichever one is higher. Barbarians can use shields with their calculation, but if you do that messes up several monk abilities.
AC calculations don’t stack so the calculation will be 10 + Dex plus either Con or Wis, whichever one is higher.
For some reason the multiclassing rules forbid getting Unarmored Defense a second time, even though they wouldn't stack anyways. So strictly speaking a Monk/Barbarian always uses the Unarmored Defense from their first class.

Huh? Where do you get this from? Unarmored Defense isn't a proficiency, it's a class ability. I've seen no rule that says you don't get all the class abilities from your second class. All I've seen regarding AC calculations is that if you have more that one option to you for calculating your AC, you can only use one at a time.
Well that just sucks. Personally if I was the DM I'd allow them access to both, they'd just have to declare which one was active. Maybe require a Short/Long Rest to switch, just for some structure.
i want to make a Monk Barbarian that worships frogs (don't ask). Would the AC be 10+Dex+Wis mod, 10+Con+Dex mod, or 10+Dex mod + con mod+ wis mod?

Haven’t used this account in forever. Still a big fan of crawling claws.

PHB 164
UNARMORED DEFENSE
If you already have the Unarmored Defense feature, you can't gain it again from another class.
Strange perhaps but that is what is says.

For reference, here's the link to the same rule in the D&D Beyond Player's Handbook:
