So I have a DM that says I can thrust a targets head through objects based off my STR vs the initial targets AC and then that the target may free them self from it based of their STR vs the substances AC.
so I’d like to know what you all may consider ‘Dirts’ AC since it doesn’t seem to specify anywhere. For consideration, these are other substances confirmed AC;

Dirt, as in ground? Personally, I wouldn't give it an AC, its the ground. You can hit it, you can stick a sword or an axe in it, but you aren't going to thrust a head through it like you could a window or perhaps a door.
For the purpose given (which is quite a creative solution, kudos to the GM), I'd give dirt an AC of 8, assuming it is soft. If it is packed earth (like a dirt path), then 10 AC, maybe 12.
If it's particularly well packed, like a city's dirt street where horses, sheep, donkeys frequent, or is deep earth (3-5 feet), it could go as high as AC 15. At some point, it could be like stone.
11 seems really high to pull your head out of paper. It's paper. My 4-year-old could do that. Likewise, the difficulty of raising your head out of dirt is marginally higher than just raising your head period. If I did a chart like this
DCs would start at wood
You would need to grapple first
Your initial check would also include the hardness of the material - it shouldn't be the same degree of difficulty to shove someone through cloth and adamantine
Materials like glass would not require a check but they would take extra damage to free themselves
However you do it, the best way to figure it out is probably just to playtest it and tune it up or down based on whether it's playing out the way you want it to.

Fine, loose sand (difficult terrain): 10
Normal soft dirt: 12
Packed earth/dirt road: 14
Based on that chart.
