To cast the ritual version of a spell you know, you need a feature, such as Ritual Casting, that gives you the ability to cast the spell as a ritual. You don’t need to also learn a special version of the spell.

I personally 'copied' spells from my team's cleric and druid, especially since the DM didn't really give me any other ritual scrolls and the variant rule (about changing a spell on a long rest) didn't exist yet but the level up swap did. I wondered if I did take a ritual spell from my own spell list, scribe it then lost it next level is that allowed?

I think I would just add the additional cost and time asked for scribing a scroll to the time needed to copy the spell, rather than force the player to create a scroll for the sole purpose of just copying it into a book, when logically they could just write everything down directly in their ritual book. So a 3rd level spell like Waterwalk would, using the Xanathar scroll scribing rules, cost 650 GP total (500 gp, the cost of scribing the scroll, and 150, the cost of copying it into the ritual book), and require a workweek to complete.
