Please forgive if this is covered elsewhere, I've been looking and having zero luck.
I am excited to see that the variant class features from Unearthed Arcana are apparently in Tasha's Cauldron. However, I don't see them on the list of purchasable content from the book. I just need the Variant Ranger abilities and would rather not buy the whole thing yet if I don't have to.
I've also turned on "optional class features" for my character but they don't come up (at least not without buying the book?).
Is the only way I can access the Variant Ranger Features by buying the whole book?
Yes, the only way you can use the optional class features is by buying the entire book.
It would be great if they could offer them as individual purchases, but I’m not aware of any official word on whether or not that’s something they’re working on doing.
I can provide some clarity there - the OCF (Optional Class Features) system is implemented at a site level, however the specific OCF presented in Tasha's Cauldron of Everything are only available by purchasing that sourcebook (or for it to be shared with you via content sharing in a campaign).
We do not currently plan to offer OCF for individual purchase.

So things like "Tireless" (of Deft Explorer) and the Favored Foe Hunters Mark option are included?
For your previewing pleasure, let me tell you how they have changed between UA and official release:
Deft explorer: no longer lets you pick the order you get its options. You get canny at 1st level, roving at 6th, and tireless at 10th.
Canny now requires you yo pick any 1 proficiency you already have to double (like expertise) instead of picking from a list you may or may not have.
Roving stayed the same
Tireless is now 1d8+wis instead of 1d10+wis and number of daily uses is proficiency mod instead of did mod.
Favored foe: no longer uses hunters mark. Now it is a free action (no BA) when you hit with an attack to mark that increases damage by 1d4 and requires concentration. Damage die increases at level 6 (d6) and 14 (d8), and number of uses is prof mod.
Ugh, I had this same question, and was a big determining factor if I buy anything from it. I would think that purchasing a subclass for (one? all?) classes would unlock the CFV for that particular class, if not, for all the classes similar to how buying any warlock subclass unlocks all the new invocations (at least in the same book)

Honestly, I would have thought the same thing. Everything else that uses tools can be bought piecemeal. Maybe these could be piecemeal too, I could see paying 2$ per class for optional features (maybe only 1$ for some like rogue that only get 1 or 2 features).
They knew most people would buy the options and skip the rest of that godaweful book so they stuck the one portion they knew everyone wanted behind the full purchase for the entire product.
