So me, being an mma fan and all, wanted to create an effective grappler for any upcoming campaign. I've read this manual on Morrus' unofficial, and it says an easy one two combo a character can make is grappling a creature, and then shoving them prone. But would you also end up prone due to common sense?

No. That the rules are weird sometimes. Just try to describe it as best you can, like that you are just on one knee, etc.
I’m pretty sure you can push someone down without falling on top of them, regardless "prone" is a technical definition in this game, not always what we assume prone is.

Not if you are grappling them, no.
Grappling in this game just means you’re using one hand to control their movement. Consider grabbing the collar of your enemy’s armor and controlling him.
Shove then, is the same, but now you’re using that handhold on his collar to keep him down.
Now, an unarmed attack on this opponent can be a head butt or kick.
I'd imagine it something like shoving them down and then putting a foot on their chest to keep them down
I have actually described a monster grappling and shoving a PC to the ground, and continuing to grapple the PC while staying standing. It was really cool.
This is an argument from/for a different thread, but the general consensus is that you can't maintain a grapple with your foot.
When a Large creature stands on a Medium creature, that seems pretty grappled to me. 🤷♂️
I mean RAW, you still have to use a spare hand to maintain the grapple, but you can reflavor it however you like to make it sound better, more realistic, or more heroic.
I prefer the horse-collar approach because then I get to flavor the unarmed strikes as a good ol’ boot scootin’ boogie!
This is one of those cases where the game mechanics don't match the mechanics in real life. Just one example, you only need one free hand to grapple. Try restricting someone's movement who's actively fighting you with only one free hand. Not gonna happen. Now give the person a weapon and try it. There are a lot of ways that the grapple mechanics don't match reality.

For a grapple build, id try to be barbarian with athletics expertise and unarmed fighting style.
Luckily there are feats for both of those.

Because you’re assuming a MMA definition of “grapple” not the DND definition.
