So, do I get an extra attack on top of my two monk attacks? Allowing me to have four attacks in total? Or is that only for the first attack in my turn? Still, that would allow me three attacks?
There's also an extra attack at lvl 5. But it does say I can't use this to get a third attack due to multiclassing rules. But that ability above doesn't say this.

Yes, the Dread Ambusher feature does work even if you have the Extra Attack feature. Just keep in mind that it only gets you an extra attack on your first turn of a combat.
Edit to add clarity: You would have your Attack action (2 attacks if you are 5th level in at least one of ranger or monk), the attack added to your Attack action on your first turn by Dread Ambusher, and the option to spend your Bonus Action for one unarmed attack because of Martial Arts, or two if you spend Ki to activate Flurry of Blows - for a total of 4 or 5 attacks on your first turn of a combat, and 3 or 4 the rest of the time.

I would agree that a hasted gloom stalker would not gain a second bonus attack in his additional attack action gained through the haste spell. The reason being not the wording of the gloom stalker Feat but that of haste ("one weapon attack only"). Personally I think with action surge - lacking any restriction - you could gain the bonus attack twice in the first turn. And why shouldnt it be possible. A pure fighter can dish out 2x4 attacks in high levels.

The Dread Ambusher ability gained by the Gloom Stalker is indeed stackable with other methods of gaining additional attacks.
Note though that it only ever adds ONE extra attack for each combat and you have to take an attack action to gain that additional attack.

The answer given in that link does not answer the action surge question as with action surge the second attack action takes place in the first turn.

I've read it through again and you're right that it can be legitimately interpreted either way - the words used just aren't specific enough.
This is the way with many of the rules though unfortunately. :(
