In terms of subraces for tabaxi I understand that there are none at the moment. In the meantime, can we simply re-skin them and keep the same stats? I figured you could, but is anyone else DMing or adventuring with a non-typical tabaxi character at their table?
The race entry for the Tabaxi doesn't specify what type of Great Cat, if any, the race is based on. I would assume the intention is that the race is a catch-all for all different types of Great Cats, from Cheetahs to Tigers to Lions to Panthers. And since you're not looking to modify the stats, you're already set to go. Just put the fur pattern/colors in the Description section of your Character Sheet and you're already done.

I like the idea of reskinning a Tabaxi as some other fast/sneaky/clawed creature. Quicker, thinner types of lizards like skinks. Wererat, weresquirrel, or other rodents. Weasel or raccoon. Get a poisoner's kit and be a weird hybrid spider thing!
why skin when you can suck out the muscle fibers with a staw and then use thaumaturgy to scream in the abyssal language to stike fear in the hearts of you enemys.
I've watched a Thai D&D Podcast (Thai people playing D&D is rarer than getting a nat20 itself. Hell, I might be the only Thai person here) and from what I have gathered, one of the dudes plays a re-skinned Neko Tabaxi. He's kinda like Shifter: Most of his body looks human, but he has cat ears and cat tails. I'll assume Shifter means any other anthropomorphic human-animal hybrid other than cats.
Maybe just go with a regular cat with an ability to talk and do stuff normal humans do, but can also change herself into a cuter, two-legged form. The two-legged form comes with fingers, so she can grab things easier. It'd be cool to see something like that, like Morganna from Persona 5.

It's confirmed that Mythic Odysseys of Theros will have Leonin, which are indeed bipedal lionfolk. They're a race from various Magic the Gathering planes. Mine's Toyger-breed cat. Basically mini-tiger that can be legally bought. He's energetic, likes to talk, and overall being a hyperactive bloke.

I want to play a Tabaxi and let me tell you OUT THERE IS A JUNGLE. Do we have canonic subraces when it comes to this race? I stumbled upon watchers and hunters but also Mountain Tabaxi, Grassland Tabaxi, Jungle Tabaxi and Forest Tabaxi. Any chance you have a clearer idea than I do?

Tabaxi, canonically, do not have subraces/subspecies. All tabaxi share the same stat block, whether it's the older block in Volo's Guide to DM Headaches or the just-released tune-up in M3. Players are encouraged to fluff their kitties any way they like, but they all have the same stats.
That said...the Theros book includes the Leonin species stat block, which is a much sturdier option. Traditional tabaxi are lean, agile desert cats; leonin are bulky, powerful grasslands predator cats. If your vision for your cat man is a dangerous frontline brawler rather than a nimble acrobat, the leonin stat block provides an option that can very easily be 'tabaxi who goes to the gym' in your game's canon.
