I recently made a Prince Zuko character to play. I decided to make him a V. Human multi classed with Fighter ( for the broadswords ) and Sorcerer ( for the fire bending ). His background is Noble. I would love to hear your people's opinions on all the ATLA races, classes, and background. Also I would welcome you all to critic my thoughts on Zuko
I have tried and failed to do this more than once. Four Elements monk is the obvious go-to but it's a deeply unsatisfying subclass (short version - you don't get enough spells and it's BS that 100% of your subclass abilities compete with your basic monk stuff for ki vs other subclass abilities like the shadow monk). It always ends with me starting to write up custom elemental monk subclasses but I don't follow through. Your build sounds like a good base for Zuko. I think Sorcadin could work for him as well because he's deeply principled and kind of rigid in the same way Paladins are often characterized.
True, but I don't really do it like that. My DM isn't making a ATLA world. It's more like one of the characters is taken into the world that my DM makes with no past remembered.
General builds for a few characters that come to mind:
Sokka would be a Dexterity-based fighter.
Zuko would probably be a sorcerer with a few fighter levels.
Katara would be a Sea sorcerer with a cleric or druid dip
Suki and Ty Lee would be monks - I guess Kensei or Open Hand for Suki, and Open Hand for Ty Lee (Quivering Palm as Chi Blocking).
I can't really decide on background for most of them. Toph, Zuko, Azula and Mai would be Nobles of course. Ty Lee could be Entertainer, because her circus career, or Noble too. I don't have an idea for other characters' backgrounds.
I feel like the obvious answer for Aang would be a monk, but I feel like he could be a bard, because he could play the flute, knew old Fire Nation songs and dances, and had high DEX and CHA like he would as a character. Maybe a druid, because he strives for balance in the world, and he enjoys nature/preserves it (plus, he doesn't wear metal armor). A pladin would be good too, if he needed a deity it would be the past avatar but if he doesn't he can just be devoted to his goals.

Maybe Sokka could have the Fisher background from Ghosts of Saltmarsh? Aang could be a hermit, since he lived with the monks when he was 0-12. I don't know about Katara though.
I have really been wanting to do an Uncle Iroh, so I have been playing around with ideas for him. Either Noble or Soldier background and then Sun Soul monk.
I am also considering a Fire Genasi Eldritch Knight.
But that would imply that every person in the Fire Nation was born of genies and humans.
Reskinning mechanics is explicitly encouraged in 5E.
Moreover - not every person in the Fire Nation can firebend. It's an ability inherited from an ancestor who was granted that power by a lion turtle. Not exactly a stretch to say getting that power turns someone into a genasi of sorts.

That's cool! I recently drew Zuko as a human fighter, Sokka as a human ranger, and Katara as a human sorcerer.
That's really awesome. I heard that Sokka usually is a fighter, but the ranger I think fits more! what are you thoughts on Aang
