Dnd beyond has gone on record as saying that the content from the Monster of the Multiverse book will be kept separate from all the other content on dndbeyond even if there is overlap. You will be able to use either without one overriding the other, so both will be valid character creation options. You will still be able to purchase any of the books, so long as Dndbeyond maintains its contract with Wizards of the Coast and/or is able to stay in business.
Besides, those books include stuff other than player races. Volo's even has dungeon maps! It's not as if the books will become obsolete when MMM drops, even if you do feel that the races will effectively be overwritten by their MMM counterparts.

I saw that comment in another forum post. I watch the dev updates (as VOD), and do not remember this ever being said. I thought maybe it was said in yesterday’s update, which I hadn’t watched yet. But when I checked this morning, there wasn’t one from yesterday. So I’m not sure where that idea originated from.
I didn't see the dev update, but I did see it raised, and folks reacting to raising in the comments to Davyd's FAQ for the release, though that FAQ didn't imply in any way that the books would be removed from the marketplace. You need to drill down, but both books are still listed on WotC's website. The books are available in similar numbers as everything else 5e at my FLGS, and are listed in Amazon etc.
My sense is this is conjecture, not wild conjecture, it's entirely plausible that WotC would stop printing Volo's and Mord'sFoeTome when MMM goes into general release (given that the bestiary content is updates to those two books), but really the real question to be asked is "Are Volo's and Mord's going out of print with the release of MMM, and if so what is to become of the the versions available on D&D Beyond's Marketplace?"

Both books are still on shelves, I don't think WotC can order (and reimburse) print outlets, including Amazon, to return the books to WotC so WotC could pulp these remainders, so even if MMM "officially replaces" the two books, I think there's enough inventory in physical retail that the books will be available for some time (maybe at a clearance level, I don't know). I imagine DDB will have to comply with their relationship with WotC; but we've been told owners of the older content will still have access to them (at least I think so, the FAQ was longer than it needed to be and was oddly circuitous in some parts especially on the races, and in the comment thread it seems to have furthered some confusion, even on stuff I thought the FAQ made solid articulations). If that is true, it may be a weird place for DDB where some users will have access to "legacy" content, and newer users may have to homebrew said content, etc.
If the books are going out of print, I don't know if we'll know from DDB soon as it took them some time for DDB to state when they'd be offering MMM and even longer (yesterday) to give an effort at explaining how that's going to work.
I gotta say for a "look at the future" WotC has done a spectacular hash in explaining MMM. I'm not just talking about here on DDB, the broader gaming press seems sorta lost on the book, and it's actually in print. I haven't seen a 5e release in the past two years, including Tasha's, where there was more confusion about the book's purpose and function.

That's a shame. MMM if I remember lacks the deeper dives into Blood War, Elven History, etc you found in the earlier books (yeah, the MM touches on some of that ground but MToF or VGtM do provide a deeper layer). I get the setting agnostic drive, but these "legacy lore books", are good inspiration of how to think about fleshing out a given monster in your campaign, whether you adopt the particulars in the book or do you own thing (which was tacitly encouraged in the disclaimer at least for Volo's that the whole work "is, like one dude's opinion, man"). I wonder if a compromise could be had where the compendium content of such legacy books could be maintained in the marketplace. It's moot for me, as I have them (and the ones in print are lack the errata aside from the sheets I printed out and inserted into them) but on the non stat block side there is some good stuff to mine, including in the current post errata controversy versions).

There is no twitch VOD for a dev update on Thursday March 24. At least not that I can find. And I listen to the Dev Updates by VOD every week, so I usually know where to find them.
On Twitter they announced they were doing a dev update about MMM on the 24th, but it doesn't seem like there is any video of it yet.
Makes me think there may have been some wrong information in it because the team is usually very quick about getting it to youtube ( sine twitch has a direct pipeline to upload vod to youtube) and the vod is gone from twitch. This purely conjecture on my part though.

to be honest, until we can see something official, it's nothing more than rumour. It could be right, but there's no especial reason to believe it. It's possible htey said something before being authorised, it's possible that they said it and it's wrong. Who does know hasn't said anything official.
As for why they would take it out of digital print, as it were, costs, problems with having conflicting details/lore, and so forth. There are reasons why they might do it, which isn't to say that they will.
