I know they are not ready for dnd beyond yet or any time soon. My question is are they still "play test" or are they accepted in official dnd now? And what are most updated class varients?
They are definitely playtest. They are not official until they are published in an official Wizards of the Coast book.

Yes, Tasha's will have Class Feature Variants although as with all UA the published version may have some changes from the playtest version.
