I'd love the option to give him 1 extra spell per level or something like that and give him the ability to choose it. Don't see how that's possible.
Assuming it's not, I've been trying to figure out something that I assume would be possible - simply add the spell, via a feat, to his known spell list. But I can't seem to figure that out either, it always comes up as an At-Will spell in his sheet.
Is this at all possible to do within DDB? And if so, how?

What exactly did you do, and what exactly are you trying to do? You won’t be able to add normal “spells known” as appear in the “Spells Known” column of the Sorcerer table.” The way aberrant mind works is more like “domain spells” a list of specific known spells. Wen you say want to “give him 1 extra spell per level or something like that and give him the ability to choose it,” did you mean:
He learns I additional 1st-level spell through one additional 9th-level spell. Nine total additional spells in all.
He learns 1 additional spell at 1st level through one additional spell at 20th level. Twenty total additional spells.
If you tell me which of those you want to do, I can tell you how. It’ll be hacky, but it’ll work. (More or less.)
I'm trying to get him more spells to choose from any way I can make it work. The only reason I tried domain spells was to see if I could find a backdoor into the hack job I was trying to do. All I did with that was copy the subclass, edit one of the spells listed into something else. (In my test I used Cure Wounds). I chose Aberrant Mind because he is working off of the Psionic Soul UA that's now achieved and figured if I had to homebrew a subclass to get there, that would be the easiest to edit since most of it is the same already.
What I'd like to do is give him the chance to learn 1 new spell per character level. That way he ends up at 35 vs a wizard's 44 or whatever it is.
OR
If I knew how to easily do it, I could leave that alone and let him learn spells from a spellbook or scroll like a wizard and just add them to his list as we go.
I have already offered to let him switch to a wizard, get all the perks of that, and let the mechanics work easier. Additionally, I would give him a nerfed version of metamagic (make sorcery points equal to proficiency bonus) but he doesn't want to sacrifice that many points to pick up all the other stuff a wizard gets.
I'm assuming the hackery it would take to make either way work is close, if not the same.

You can make a copy of their subclass and add the spells in there. Feats and magic items don't play nicely, unfortunately.

Add an additional 1st-level feature, then as part of that feature, [ADD A SPELL]. Fill the form out exactly as I explain it:
Then [SAVE CHANGES] for the whole class feature. Then add the same class feature 19 more times (one at each class level).
Once done, [SAVE CHANGES] for the entire subclass and wait 20 minutes before checking it again.
