It’s hard because it has relatively light armor, but I don’t want some fighter to easily damage it because it has more than enough to stop normal dnd weapons

Perhaps using a damage threshold would be useful.
Tbh I never quite figured out how those work
It's things like "You need to do at least 25 damage in a single strike to actually do any damage." So if a fighter with 20 STR and a +3 weapon hits with a greataxe for the max 20 damage it doesn't nothing. But if they got a critical hit with 32 damage then it actually damages the thing. (And you can modify the threshold up to what's needed.)

It takes the full damage. It’s not a subtraction thing, just it only technically hits if that is met.
