How many campaigns running at once is too many? Because i'm DMPC in four, PC in a duet campaign, and Dm in another duet campaign? Yet I still manage to keep track of all of them.

Well one guideline I've heard is 6ish medium encounters to push through a party's resources. And remember that a fully rested party taking on a deadly encounter will not feel very deadly. So try to have some encounters beforehand that should use some resources (spell slots, hit dice, etc) and then you'll make later ones harder. Plus even a well-powered solo character can take on creatures of a higher CR than their level.
Might take some working through to get the feel for things.
