After a kensei makes their unarmed attack, can they (if they have the actions to do so) also attack with the melee weapon that is affording then the AC bonus?
You only have to make "an" unarmed strike as part of your Attack action, so you can use the weapon and still get the AC bonus so long as you have other means of adding attacks to that single unarmed strike, such as with the Extra Attack feature or with the haste spell. Agile Parry only requires you to deliberately withhold a single weapon attack, essentially.

It specifies an Attack Action. This means that it can't be, say, an unarmed strike that you make as a bonus action. It would have to be one of your main attack(s). Reaching 5th level for extra attack would make it a lot easier. This all is, of course, assuming I didn't miss something which is very possible

Since the unarmed strike has to be made with the Attack action, you're effectively downgrading one attack you'd normally make with your kensei weapon. That's what ratwhowouldbeking means by "withhold a single weapon attack"

No, it does not; it specifically states that the Unarmed Strike needs to be part of THE attack action. Whatever you do in your flurry of blows is irrelevant to it.

Yes, you can make an attack vs any target, as a “valid” target is undefined.
a target of an attack can be an object, a creature, or a space.
usually targeting a space would be done if unsure of where a hidden creature is. this would generally be in Hopes that the hidden creature is in that space. There are a few class features that can happen off of attacks without specifying hits or even targets. For example, the horizon walkers level 11 feature says it needs to take the attack action and make attacks before each 10ft teleport, but also does not specify hits or targets.
doesnt seem particularly advantageous to me though. Perhaps attack the air and bonus action dodge or lay prone if being targeted by ranged attacks? Very niche use. I’m probably missing something though.
