When selecting my eldritch invocation I went to select Book of Ancient Secrets and while it is only supposed to let me pick 2 it is letting me pick 3 and when I put in that third one a 4th spot becomes available. Selecting this 4th spell adds another and it seems like this will let me add as many spells as I want.
Maybe that spot is to be used when you actually get a spell to add to the book.
But it's definitely a bug and should be reported.

This is not a bug. This is a feature of the invocation. It gives you two by default, but you can add more as you find them in-game. That's where the 3rd, 4th, 5th, etc. slots come in.
On your adventures, you can add other ritual spells to your Book of Shadows. When you find such a spell, you can add it to the book if the spell’s level is equal to or less than half your warlock level (rounded up) and if you can spare the time to transcribe the spell. For each level of the spell, the transcription process takes 2 hours and costs 50 gp for the rare inks needed to inscribe it.

Yeah, I think he means on the sheet it allows him to pick the initial 2 then also allows him to pick the next one before he has acquired it in an actual game dynamic.
That's probably the easiest way to let you add them to your book as you find them.

The sheet has no way of knowing if or when a new spell has been located. It just supplies the mechanical possibility and trusts player and GM to do things correctly.
