Why, when making a background, does it ask for you to input information that doesnt appear when you're choosing a background in the character builder? like it has you input background specific tables, but the character builder doesnt do anything with it.

It has to be rolled/chosen separately and then manually added to a character sheet. But that’s hard to do since it doesn’t even show up in the character builder.

like IamSposta said. an example would be the Soldier background, and it's Specialty table that determines what position you had in the army.
The Background creation process has you fill out the information for the Background specific table, including a name, description, and even inputing the different options, but it's never visible anywhere in the character creator.
Similarly, the options for Contacts gained through a background, and any Variant/Variant features of a background, can also be added to the background when creating it, but when making a character there's no option to do anything with them

There's a lot they could add that is minor flavor. XGtE class flavor options, This is Your Life. Heroic Drive and Renown from MOoT and GGtR. Didn't EGtW add a new flavor mechanic too?
EGtW added the heroic chronicle, which included flavor options for things like "favorite food", some wildemount specific homeland and home town tables, allies and rivals, fateful moments, mysterious secrets you'd have, or prophecies influencing your future
I just spent a bunch of time with my first home brew background and I also don't have the choice to select a “background specific table" even though I painstakingly created one. Same with languages but I am more interested in the table working.
Ironically I followed all the guidelines in the A Homebrewers’ “How-To” FAQ* and couldn't find the answer only to discover the author had the same question and it's still unanswered.
